I’m lucky to receive lots of lovely feedback after delivering a wedding cake, and couples often mention how much they’ve enjoyed their cake journey. This can be as straightforward or involved as any consultation: some clients simply email an image of some flowers and a short ‘along these lines’ message; and others really get involved with lots of input at every stage.
Try before you buy
Most couples attend a tasting or receive sample cakes in the post. Wedding cakes are available in vanilla Madeira, lemon, chocolate, chocolate orange, chocolate, coconut, red velvet, matcha and vanilla and chocolate marble flavours.
These are the recipes that are tried and tested to remain fresh throughout the assembly and decorating process. A huge variety of fillings are available to complement these flavours, and the Italian meringue buttercream that I have developed has just the right level of sweetness to enable these flavours to sing.
Most popular are lemon, vanilla, chocolate ganache, elderflower and champagne, but I receive lots of requests for more quirky flavours and enjoy experimenting with different extracts and reductions to create delicious fillings.
Tastings are held at my home in Westerham every month. Couples book one-hour slots and we sit down with a coffee and some cake and chat through various ideas and options.
It’s always a good idea to bring invitations, scraps of bridesmaid dress fabric, images of flowers that may be used to dress the venue and so on: all can be used to inform the design of the cake, which should bring all these visual elements together to create a unifying centrepiece.
I’m only able to travel to tastings during the week Jan-Mar, and the charge for this varies according to distance. The charge may be redeemed against a cake order.
Your Unique Design
After the tasting, I create a sketch and send it to the couple with a quote, which includes a price for delivery. The sketch will include notes on flavours and the size and serving yield of each tier. If a finish is difficult to sketch, metallic for example, I’ll apply it to a small dummy cake and send over photographic images of the model. If the couple are happy with the design, I’ll send an invoice for a non-refundable deposit of £150, which will secure their date. The balance of the total amount payable is due 28 days before delivery.
Not all couples attend a tasting. Samples can be posted, with no charge if they subscribe to the newsletter, and for £20 otherwise. Many successful designs are created via email.
Westerham is an historic market town on the border of Kent and Surrey, just outside the London Borough of Bromley. There are a number of independent shops, pubs and restaurants clustered around the town’s central green, which is five minutes’ walk from the house.
The nearest train station is in neighbouring Oxted. Trains from central London take around 50 minutes, and Westerham is then around 10 minutes in a taxi. There is a taxi rank at the station.
By car, Westerham is easily accessible from the M25 (J5 or 6) and via the A21, A233 from central London.
