Buttercream cakes are hot right now – the Royal wedding cake was roughly frosted in blush buttercream and dressed with billowing pink peonies, but rustic is not the only option. ‘My cake journey began around 20 years ago, making novelty cakes for friends and family as a hobby while I worked as a business journalist. When I discovered the versatility of buttercream, I was hooked. It’s so delicious and I can create huge decorative cakes in a fraction of the time it would take to construct something similar out of fondant, a bonus for someone with little patience. This is why buttercream cakes are often surprisingly inexpensive.
